But, I promised to post my mom's Cashew Chicken recipe, because... well, because it's wonderful. And she's wonderful. And also because I've been told some of you are following the same menu this week, and you'll need to know what to buy at the store!

Cashew Chicken (I wish I had a picture. I'll take one after I make it this week).
Chop 4 chicken breasts into bite size pieces. Add 1 TBS cornstarch. Stir fry, then set aside.
In a small bowl, combine:
1/4 cup of wine vinegar
1/4 cup soy sauce
4 tsp sugar
3 chopped green onions
2 cloves of minced garlic
1 tsp crushed red pepper
1 tsp fresh ginger
1 tsp sesame oil
Once combined pour over chicken in a large skillet, heat until thoroughly heated.
Top with cashews and serve with white rice.

My mom is a great cook, but she's also an amazing gardener! I hope that someday soon, my mom will guest blog for me about her gardening. I think she would be perfect and would be able to tell all us girls (and guys) who need help with our yards, some fun small projects we could all do to improve our yards.
