Mom's Cashew Chicken...

I know I know... I didn't post an update to my weekly attempt at my set menu.  Well, my update is that I got sick so Stephen made dinner last night.  It was wonderful.  We skipped ahead to Thursday's plan (the veggie ciabatta) and it made me happy.  I love those.

But, I promised to post my mom's Cashew Chicken recipe, because... well, because it's wonderful.  And she's wonderful.  And also because I've been told some of you are following the same menu this week, and you'll need to know what to buy at the store!

 Here is her recipe for Cashew Chicken...

Cashew Chicken (I wish I had a picture.  I'll take one after I make it this week).

Chop 4 chicken breasts into bite size pieces.  Add 1 TBS cornstarch.  Stir fry, then set aside.

In a small bowl, combine:
1/4 cup of wine vinegar
1/4 cup soy sauce
4 tsp sugar
3 chopped green onions
2 cloves of minced garlic
1 tsp crushed red pepper
1 tsp fresh ginger
1 tsp sesame oil

Once combined pour over chicken in a large skillet, heat until thoroughly heated.

Top with cashews and serve with white rice.

My mom is a great cook, but she's also an amazing gardener!  I hope that someday soon, my mom will guest blog for me about her gardening.  I think she would be perfect and would be able to tell all us girls (and guys) who need help with our yards, some fun small projects we could all do to improve our yards.  Don't you want to know these things?  I do.  Beth Teel... get your fingers ready to type, you fast typer you.  Whip up a blog for me.  Pretty Please?

Oh, I wish my back yard looked like your mom's. She's beautiful and her yard is, too. I'm inspired. I'll call straightaway to have a gardner come do my beds. Ha!
