Anyway, maybe if I blog about a menu and promise to post updates, I'll actually do it. I will feel some sort of accountability. Although, I know no one will hold me to it. And no one will complain if I end up serving my back up rotissere or hormel meal.
So here goes. We'll call this Simple Summer Suppers...by Sarah (ha).
Monday- Something ridiculously quick. See, I have to go to the store to buy all of "said" items below, so this meal must cook itself while I put up groceries. And since the home run derby is on tonight (I've been told by a certain someone)... lets do a baseball theme with mini sliders (which when we make these, Stephen and I just stand in the kitchen singing "Mini Sirloin Burgers... Yippee Yi Eh... Mini Sirloin Burgers... from that stupid commercial)
Mini Sirloin Sliders
Sweet Potato Fries (not fried, but baked!) - picture below shows regular oven wedges. Tonight... sweet potato ;)
Side Salad (so I feel better about the whole thing)
How we make them:
Purchase premade slider patties, located near your beef counter. Freeze patties you do not use.
Slider buns (freeze buns you do not use)
One white onion, chopped
One package of baby bella mushrooms, sliced (I found them pre-sliced)
Provolone cheese slices
Small vine ripe tomatoes (we will slice 2, save the others for a salad, another day)
Lettuce (used for salad and to top burgers)
1 large Sweet Potato (will feed 2 people)
Prepare your meat by seasoning with the seasoning of your choice, along with a tsp of soy sauce and a tsp of worschershire sauce. Let sit at room temperature for 10 minutes.
In a skillet, brown a cup of chopped white onion using a little bit of butter (use more onions if preparing more than 4 sliders)
Also in a skillet, place 1 cup of sliced baby bella mushrooms until they are browned, with a little bit of butter.
Place all patties on a hot skillet (easier than firing up the grill for such small patties!)
Cook until they are to your liking!
Toast slider buns in the oven or toaster oven
Once your onions and mushrooms are browned, top each slider with a small slice of provolone cheese, while in the skillet. Cover skillet with a lid or foil to steam the burgers, making them moist and this also helps melt the cheese quicker. When the cheese is melted, place each slider onto a bun.
Top each slider with the condiment of your choice, along with some browned onions, mushrooms, tomato and lettuce. Enjoy!

Wednesday - Penne with Brown Butter, Arugula, and Pine Nuts...(via Giada... love her)
Thursday - Summer Veggie Ciabatta (I've blogged about this. I love it so much I'm going to make it again).
Friday- Something with sauce... since that's what Stephen loves!
Slow Cooker Smothered Pork Chops (because by Friday.. I will need a slow cooker recipe)

Let's hope I can do it! Luckily I have a wonderful hubby who loves to cook (more than me I think) so he's the best helper a girl could ask for.
