Fun (Recipe) Find Friday...

So, many of you know, that Stephen is now working closer to home, and we've been able to have lunch every day together.  We've been eating in, and trying to save money (means more to spend on things like OVENS) 

Anywho, yesterday, as I was searching for things to make this weekend and next week... I found this recipe on the Tasty Kitchen website:

Parmesan Pesto Veggie Sandwich

 This recipe is everything I like about summer cooking:
1. Easy
2. Light
3. Involves 3 of my essential food groups (bread, cheese and tomato)
4. Easy
5. Toasty
6. Could be regarded as somewhat healthy?  It has lots of veggies... we'll call it healthy.
7. Does not require an oven.  Becoming more and more important to me right now!

So, at lunch today, I tried it.

AND IT WAS SO GOOD!  Stephen loved it.  I loved it.  I wanted another but had to go back to work.

You must make this.

Preparation Instructions

Chop the squash and zucchini into coin-shaped pieces. (I sliced mine really thin... put them in a bowl, tossed with olive oil, salt and pepper)

Grill them on the grill or in a skillet with a little oil, salt, and pepper until just tender-crisp.

Stack the veggies on the ciabatta. (I sliced my ciabatta, then as my veggies were cooking, I toasted it in the toaster oven until they were just a little toasted and yummy)

Top each ciabatta with a tablespoon of pesto. (I took my ciabatta, put pesto like a spread on the bread then layered my veggies on top of the pesto...)

Place a slice of tomato on top of the veggies. Sprinkle or grate Parmesan cheese on the tomato, and place in the oven (without the top half of the bun) on broil/high broil for 3-5 minutes.

Add another tablespoon of pesto to the inside top half of each bun, replace it on the sandwich, and enjoy! (I didn't add more pesto.  I kept it to just the bottom side and it was plenty.  You can get too much of that stuff and then no one wants to kiss you.  Just sayin)

Ingredients:

  • 1 whole Summer Squash
  • 1 whole Zucchini
  • 1 whole Tomato
  • Olive Oil
  • Salt And Pepper
  • 2 whole Ciabatta Rolls (whole Grain Works Nicely)
  • 4 Tablespoons Pesto (homemade Or Store bought)
  • ¼ cups Parmesan Cheese

i seriously want one of these right now. ciabatta bread is one of my new favorite things. ESPECIALLY when it's cradling one of Brewburger's Bison Burgers. yum. i'm hungry now...and I MISS YOU!
